1-1/2 cup Sooji (Semolina/ Rava)
1 cup Curd (Dahi / Yogurt)
1 tablespoon Ginger, grated
1/2 cup Sweet corn
1/2 cup Green peas (Matar)
1/2 cup Carrot (Gajjar), grated
1/2 cup Coriander (Dhania) Leaves, finely chopped
3 to 4 Green Chilies, finely chopped (adjustable)
1 tablespoon Mustard seeds
1/2 tablespoon Chana dal (Bengal Gram Dal)
10 Curry leaves
1 tablespoon Vegetable Oil
Salt, to taste
1 teaspoon Eno fruit salt
1 cup Water
1 cup Water
Directions
- To begin making the veggie rava idli recipe, in a large bowl add the semolina/rava, yoghurt and water. Whisk to combine all the ingredients.
- To the same bowl, add the corn, peas, carrot, green chilies, ginger, coriander and salt to the mixture. Mix well to combine and leave aside.
- Heat a tadka pan, with oil on medium heat, add the mustard seeds, chana dal, curry leaves and green chilies. Saute for a minute and turn off the flame.
- Add the tadka to the suji/rava mixture, at this stage also add the eno fruit salt and mix well.
- Preheat the idli steamer with enough water, grease plates of the idli mold.
- Ladle the veggie rava idli batter into each of the cavities and place it in the steamer. Steam for 12-15 minutes.
- After 15 minutes, check if the idlis are done, by inserting a skewer, if it comes out clean, if it’s not done cover and steam for a few more minutes.
- Serve veggie rava idli along with tomato garlic chutney and beetroot sambar recipe and banana and mango smoothie recipe for your breakfast or pack it in your kids lunch box.
