Gulab Jamun

Gulab jamun is a famous Indian dessert & is enjoyed in most festive and celebration meals. This classic Indian sweet is made with milk solids, sugar, & cardamom powder.

Ingredients:

For Gulab jamun

200 grams milk powder

200 grams of milk

2 tbsp ghee or oil

1/4 backing powder

Ghee for deep frying the gulab jamun

For Sugar syrup

1/2 kg sugar

1/2 liter water

1/4 tsp cardamom

For Garnishing

Silver work (optional)

Direction:

In a large bowl, heat 3 tbsp ghee. To that add milk, and milk powder. Keep heating and stirring continuously till semisolid mass is formed

Allow the semisolid mass to cool slightly. To this add all-purpose flour and backing powder and mix the semisolid mass through and evenly for about 6 – 8 minutes till a smooth stiff mass is formed.

Divide the smooth dough into equal portion sizes and roll it like a small ball.

They must be smooth without cracks or lines. Keep them covered.

Heat ghee in a kadai, drop a small ball of the dough to check the temperature of the ghee once it’s medium hot.

Start frying the gulab jamun mix on medium flame, making sure the ghee is not too hot or else the gulab jamun will brown without cooking.

Fry the balls till light golden. Keep stirring gently so that it cooks from all the sides.

Add them to the hot syrup. Allow them to rest at least 2 hours.

For Sugar syrup

In a saucepan, add water, sugar, cardamom pods, and dissolve the sugar in water till it gets thicken on medium flame.

The sugar syrup should be hot.

For Garnishing

Serve in a bowl, garnish it with silver work.
